A wedding menu that tastes of Tromsø
I cook weddings in Tromsø at chalets on the Lyngenfjord, homes on Kvaløya and private spaces with a view of the mountains, from an intimate dinner to 500 guests. You get one chef responsible for every plate, a menu written for you and a team I brief and lead.
The Arctic pantry here is reindeer, Arctic char, skrei in winter and red king crab from the Barents Sea coast, with cloudberries and lingonberries from the tundra. I serve reindeer raw as a tartare, smoke char over birch and keep the cooking warm and generous for cold days.
Winter weddings tend to be small and intimate, with a ceremony in the last of the blue light and dinner by the fire. If the sky clears, everyone goes outside, so I build the menu with pauses that can wait for the northern lights.
A menu idea: Reindeer tartare, birch-smoked Arctic char and king crab with brown butter, finished with cloudberries.
Season and logistics
The main wedding season in Tromsø runs from September to March for northern lights weddings, and from late May to July under the midnight sun. Winter weddings here mean snow, ice and short or no daylight, so I plan transport, warm holding and a kitchen close to the table. I work alongside your planner and venue so the kitchen fits into their timeline.
