Restaurant-quality dining in your villa
I cook for villas along the West Coast of Barbados in St James and St Peter, from Holetown and Paynes Bay to Mullins and Speightstown, and on the south and east coasts too. Sunset tasting dinners on the terrace and every meal of a family stay.
Barbados gives me flying fish, mahi-mahi (known locally as dolphin), snapper and spiny lobster, with breadfruit, sweet potato, christophene and scotch bonnet. I take cues from cou-cou and flying fish, the national dish, and from Bajan seasoning with its thyme, marjoram and scallion, then cook over fire with a lighter, modern hand. Barbadian rum, from aged sipping rums to rum punch, pairs naturally with the menu.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

Restaurant at Home
A tasting menu of six to eight courses, cooked and plated in your kitchen, with wine or non-alcoholic pairings. For dinners of 6 to 12 guests.
Family and residencies
A private chef for your family for two weeks or a season, with menus for children, dietary needs and a weekly plan.

Do you shop at the local fish markets?
Yes. I buy fish from markets such as Oistins and produce from local growers wherever I can, and plan the rest before I arrive.
Can you cook Bajan food as well as tasting menus?
Yes. I can build a meal around flying fish, cou-cou and fish cakes, or a modern tasting menu that uses Bajan produce.
Can you cook for a family with young children for the whole stay?
Yes. I plan children’s meals alongside the adult menu and work around beach and nap times.
