The island blends French technique with Caribbean produce: spiny lobster, mahi-mahi and wahoo, tropical fruit, citrus and spice. Much of the pantry arrives from France, so I plan the shopping ahead of each stay.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

Yes. This is the busiest time on the island, so please write as early as you can.

Yes, on request, with the galley and provisioning discussed ahead of time.
How is travel handled?
Yes. Travel and accommodation are added to the quote, and I plan menus and shopping before I arrive.
