Restaurant-quality dining in your villa
I cook for villas around Sant Francesc Xavier, Es Pujols, Sant Ferran and the quiet heights of La Mola, and for boats anchored off Ses Illetes. My menus here are simple, sunlit and built on what the island and the boats bring in that morning.
Formentera has its own traditions: peix sec, the fish dried in the sun and wind, which goes into the island’s country salad with potatoes and peppers, sun-ripened figs from trees propped on wooden crutches, and salt from the flats of Ses Salines. I grill local fish and lamb over wood, and keep plates light with island tomatoes, capers and wild herbs.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

How do you get ingredients to Formentera?
Fresh fish and vegetables come from the island itself, and anything else comes over on the ferry from Ibiza. I plan the shopping around the crossings so nothing runs short.

Is it possible to have dinner served on a boat off Ses Illetes?
For small groups on a suitable boat, yes. I need to see the galley or the deck space first so I can plan what can be cooked on board.
