A wedding menu built from the wild plants, flowers, seaweeds and mushrooms that grow around your venue, so every plate tastes of the place you chose.

A menu that could only be served there

Foraging is at the heart of my cooking. Before a wedding I study what grows around the venue in that season: wild fennel and sea herbs on a Mediterranean coast, mountain herbs and mushrooms in the Alps, wild flowers in a vineyard in spring. Those flavours run through the whole menu, from the welcome drink to dessert.

Ferments, pickles and preserves

Weeks before the wedding I prepare ferments, pickles, oils and vinegars from local plants and fruit. They give the menu its sharpness and depth, and make a beautiful wedding favour for guests to take home.

A foraging walk for the wedding weekend

For couples and guests who want it, I lead a foraging walk on the day before the wedding, followed by a relaxed lunch cooked with what we found. It is one of the best ways to bring two families together.

Safety and sourcing

I only use plants I can identify with certainty, gathered where foraging is allowed and in quantities that leave plenty behind. Wild ingredients are the accent; the backbone of the menu comes from local farms, fishermen and markets, so a large wedding never depends on what the hillside gives that week.

Yes. I only use plants I can identify with certainty, and every guest with an allergy or dietary need gets a plate designed for them.

What if little is growing at our wedding date?
