Why fire
Fire is the oldest way to cook and still the most exciting to watch. Guests gather around it, the smell carries across the venue, and the food has a depth you cannot get from an oven. It suits vineyards, olive groves, estancias, mountain meadows and beaches, the places couples choose when they want a wedding that feels like the land around them.
What I cook over fire
- Whole fish and shellfish grilled over embers, dressed at the last moment with herbs and citrus.
- Lamb, beef or pork cooked slowly on the cross or the grill, in the Argentine and Patagonian tradition, then carved at the table.
- Vegetables in the coals, charred and smoked, finished with ferments and wild herbs.
- Bread and flatbreads baked on the fire during the aperitif.
- Smoked and caramelised desserts, from fruit roasted in the embers to smoked creams.
Fire with fine-dining precision
Live fire does not have to mean a rustic barbecue. I cook over fire and plate with restaurant precision, so a wedding can be a family-style feast, a plated tasting menu or a mix of both. Fire stations during the aperitif are a popular way to start: guests watch the cooking while the canapés come straight off the grill.
Planning a fire kitchen at your venue
Every venue has its own rules. I check fire permits, wind exposure, distance from guests and buildings, and summer fire restrictions with the venue and your planner well before the date. Where open fire is not allowed, charcoal grills and wood-fired ovens usually are. For larger weddings I bring a hired team and set up a field kitchen alongside the fire.

Can you cook over fire for a large wedding?
Yes, up to 500 guests. Larger weddings combine fire stations with a field kitchen and a hired team that I brief and lead.
What if open fire is not allowed at our venue?
Charcoal grills and wood-fired ovens are usually allowed when open fires are not. I check the rules with the venue before we plan the menu.
Can a fire menu still be plated and elegant?
Yes. I cook over fire and plate with restaurant precision, so the dinner can be a plated tasting menu, a family-style feast or both.
Is fire cooking only for meat lovers?
No. Fish, shellfish, vegetables, bread and desserts all go on the fire, and every dietary need gets its own plate.
