Restaurant-quality dining in your estate
I cook in sporting estates, shooting lodges and remote houses around Inverness, Speyside, the Cairngorms, Royal Deeside, Loch Ness and the Isle of Skye. Hearty breakfasts before a day on the hill, long dinners after stalking or fishing and relaxed family stays.
The Highlands give me red deer venison, grouse from the Glorious Twelfth in August, langoustines and hand-dived scallops from the west coast and wild salmon from the rivers in season. In late summer the birch and pine woods are full of chanterelles and the moors of blaeberries. I cook over fire and smoke, with a dram of Speyside whisky never far from the table.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

Villa and chalet stays
Breakfast, lunch and dinner for the length of your stay, with the shopping, planning and kitchen taken care of.
Foraging and cooking
A guided walk to gather wild plants and mushrooms, followed by a hands-on lunch with what we found.
Restaurant at Home
A tasting menu of six to eight courses, cooked and plated in your kitchen, with wine or non-alcoholic pairings. For dinners of 6 to 12 guests.

Can you cook for a shooting or stalking week on an estate?
Yes. I can cook early breakfasts, packed or hot lunches on the hill and dinners in the lodge every night.
Can you cook the game we shoot or catch?
Yes. I am happy to prepare venison, grouse or salmon from your days out, as long as it is handled properly first.
Are remote estates a problem for you?
Yes. Travel and accommodation are added to the quote, and I plan menus and shopping before I arrive.
