From Adrogué to the world’s best kitchens
I was born in Adrogué, in the south of Buenos Aires, into a family with German roots. Argentina gave me the fire: the asado, the patience of cooking over embers, and the idea that a meal is a reason to gather everyone around one table.
For the last ten years I have worked in high-end gastronomy, in kitchens where every detail matters:
- Noma, Copenhagen. Sous Chef of R&D in the Noma group. Three Michelin stars, named the best restaurant in the world five times.
- Kokkeriet, Copenhagen. Head Chef. One Michelin star.
- Gallo d’Oro, Funchal, Madeira. Two Michelin stars.
- Memories, Bad Ragaz, Switzerland. Three Michelin stars.
- Verve by Sven, Bad Ragaz, Switzerland. One Michelin star.
- Le Clair de la Plume, Grignan, Provence. One Michelin star.
- After Seven, Zermatt, Switzerland. Sous Chef. One Michelin star.
- Villa del Monte, Santa Brígida, Gran Canaria. Reopened as a gastronomic rural hotel, running all food and beverage.
Villa del Monte, where my cooking found its voice
In Santa Brígida, in the hills of Gran Canaria, I helped reopen Villa del Monte as a gastronomic rural hotel and took charge of all its food and beverage. Cooking every day for guests, with island farmers and fishermen, shaped my cooking into what it is today.
How I cook today
As a private chef I bring that standard to your table, wherever it is. I cook with small producers, fishermen and farmers, forage when the right ingredient is not in the market, and build each menu around your guests, their allergies and the season. Fermentation, smoke, fire and zero waste are at the heart of it.
I cook tasting dinners, villa and chalet stays, family residencies and weddings from an elopement dinner for two to 500 guests. Travel is added to the quote, so anywhere in the world is possible.
Languages
Spanish and English are my mother tongues. I speak German and French fluently, and some Portuguese and Italian, so I can talk menus with you, your planner and your venue directly.
Where to find me
