Restaurant-quality dining in your chalet
I cook in chalets across the Chamonix valley, in Les Praz, Argentière and Les Houches and up towards Le Tour and Vallorcine. After a day on the Aiguille du Midi, the Grands Montets or the trails, I bring dinner to the table with Mont Blanc outside the window.
The valley gives me Reblochon, Abondance and Beaufort, Savoie charcuterie, lake fish and génépi, plus a wild pantry I love to forage: wild garlic in spring, bilberries and wild mushrooms in late summer and mountain herbs all season. I cook them over fire with a little smoke, and pair them with Savoie wines like Mondeuse and Jacquère.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

What wild plants do you forage around Chamonix?
It depends on the season: wild garlic, nettles, mountain herbs, bilberries and mushrooms, always where picking is allowed, as parts of the valley are protected nature reserves.
Can you feed a climbing or trail running group with big appetites?
Yes. I plan early, hearty breakfasts, food to carry on long days and dinners that properly refuel.
Do you cook in Vallorcine and Saint-Gervais as well?
Yes. Travel and accommodation are added to the quote, and I plan menus and shopping before I arrive.
