I cook for homes and villas in San Sebastián, from Ondarreta and Igueldo to Gros and the Old Town, and along the coast to Getaria, Zarautz and Hondarribia. Pintxo evenings, Basque tasting menus and weddings in green hills are what I love to cook here.
Basque cooking is built on fire and the sea: whole turbot grilled the Getaria way, kokotxas, aged beef chops, beans from Tolosa and mild guindilla peppers. I pour Txakoli from Getaria with the fish and serve Idiazabal cheese, smoked and unsmoked, and I cook as much as I can over oak and vine cuttings.
I have spent a decade in Michelin-starred kitchens, as Sous Chef of R&D in the Noma group and Head Chef at Kokkeriet, and I bring that standard to every table I cook for. My story.

Can you do a pintxo evening at home instead of a sit-down dinner?
Yes. A standing pintxo evening with a few hot plates from the grill is a fun way to start a stay or celebrate.
Can you grill a whole turbot like in Getaria?
Yes, for the right group size. I grill it whole over embers and baste it the Basque way, then carve it at the table.
How is a booking confirmed?
A date is locked when a deposit of at least 60 percent is received. Until then it is only a hold.
