A wedding menu that tastes of Skagen
I cook weddings in Skagen at summer houses in Gammel Skagen, dune gardens and beaches facing the Skagerrak, from an intimate dinner to 500 guests. You get one chef responsible for every plate, a menu written for you and a team I brief and lead.
Skagen is a fishing town, known for its prawns and the fish sold at the harbour, with plaice, cod and langoustines from nearby Læsø. I add sea buckthorn and rose hips from the dunes, new Danish potatoes and smoked fish, and I cook over embers on the beach when the wind allows.
Guests gather in the late afternoon when the famous Skagen light turns soft and golden, and the ceremony often looks out over the sea. Dinner is relaxed and long, and the bright summer evening carries the party into the dunes.
A menu idea: Skagen prawns and smoked fish for the aperitif, then plaice with brown butter and sea buckthorn to finish.

The main wedding season in Skagen runs June to August. The coast here is often windy, so I plan sheltered cooking and table settings that will not blow away. I work alongside your planner and venue so the kitchen fits into their timeline.
